COMMERCIAL DESCRIPTION
"City of the Sun is a big, fruity, pungent, sticky, delicious IPA. Mosaic & Motueka give it a very fruity hop character, with Simcoe providing enough of a piney backbone to prevent it from going off the deep end. The complex but unobtrusive malt character gives it a medium body and a platform for the saturated hop flavor."
This recipe assumes a brewhouse efficiency of 70%.

1.00 kg Gladfields ale malt
.012 Gladfield Light Crystal
Mash in at 74.9C with 18.83L water, rest for 60 min at 65.6C.
Sparge with 14.69L water at 75.6C
Preboil size should be 26.29L.
75 minute Boil
Hops:
60g Pacific Jade at 60 min
10g Motueka at 10 min
20g Mosaic whirlpooled for 10 min
20g Simcoe whirlpooled for 10 min
35g Mosaic Dry hopped 4 days before bottling
35g Simcoe Dry hopped 4 days before bottling
25g Motueka Dry hopped 4 days before bottling
